虾仁炒饭

虾仁炒饭非常简单快速。我一般情况下能在15 分钟内做好。每当我下班后不想花很多时间做晚饭的时候,我就会做这个虾仁炒饭。它非常美味,你一定会喜欢的。试试吧。
食材:

冷饭 400克
虾仁 250克
玉米 150 克
青豆 150克
香菜 少许
油 45ml
盐 5克
黑胡椒粉 1.5克

方法:

1. 虾去壳去虾线,虾太大可切小
2. 虾仁加盐2克,黑胡椒粉1.5克,腌制10分钟
3. 打鸡蛋2 个
4. 大火热锅,加油15ml,加入虾仁,中火翻炒1.5分钟后出锅;再加油30ml, 大火翻炒青豆和玉米2分钟,加入米饭翻炒均匀;加盐3克,并倒入蛋液翻炒,最后加入虾仁, 30秒后出锅
5. 香菜点缀(可无)

要点:

1. 要用冷饭,这样炒好后的饭会粒粒分明
2. 炒饭之前尽量把饭团弄碎再倒入锅中
3. 炒虾仁的时间要根据虾仁的大小,不要炒的太老

Ingredients:

Cooked chilled rice 2 cups
Shrimp 250g
Corn 1 cup
Pea 1 cup
Parsley optional
Oil 3 tablespoon
Salt 3/4 teaspoon
Ground black pepper 1/4 teaspoon

Directions:

1. Remove shrimp shell and intestinal tract, cut to proper size if the shrimps are big
2. Marinate the shrimps with 1/4 teaspoon of salt and 1/4 teaspoon of ground black pepper for 10mins
3. Beat two eggs
4. Heat the pan over high heat, add 1 tablespoon of oil and the shrimps, stir fry the shrimps over medium heat for about 1.5 mins, and remove from the pan, leave the oil and cooking juice in pan; add 2 tablespoon of oil, stir fry peas and corn for about 2 mins over high heat until they begin to soften; add rice and mix well with peas and corn; add 1/2 teaspoon of salt, then evenly drizzle in the beaten egg, stir fry to mix well with other ingredients; add shrimps , dish up in 30 seconds
5. Garnish with one pinch of parsley (optional)


Cooking Tips:

1. Cook the rice a day ahead of time and refrigerate, this helps to dry the grains out enough to give your fried rice a good texture
2. Separate the grains before cook, otherwise you will end up spending time trying to separate the hard chunks of rice while cooking, this will slow down the cooking process and may cause you to overcook the other ingredients
3. Stir fry time of the shrimp will vary based on size of shrimp, do not overcook
